Strawberry and Cherry Tart


Ingredients
  • 3 egg yolks
  • 1/4 cup powdered Sugar
  • 2 tbsp cornflour
  • 2 tbsp plain flour
  • 1 tsp vanilla essence
  • 1 1/4 cup milk
  • 150ml Fresh Cream
  • 1 cup strawberries(chopped)
  • 1 cup cherries (chopped)
  • 4 tbsp strawberry Jelly
  • fresh mint leaves,to decorate(optional)
     
For the Pastry
  • 1 1/4 cup plain flour
  • 1/2 cup butter,diced
  • 1 egg yolk
  • pinch of salt
  • 2 tbsp chilled water
    

Method
Sift flour and salt into a bowl.Rub in the butter until the mixture resumbles fine breadcrumbs.Mix the eggyolk with the chilled water and sprinkle over and mix to a firm dough. Put the dough into a lightly floured surface and knead for few seconds.Wrap in clear film and chill for 30 minutes. Roll out the pastry and use to line a tartlet tin. Preheat oven to 200 degree C.Prick the base of the pastry,line with foil and bake for 15 minutes.Remove the foil and then bake for 10 minutes.Leave to cool. Beat the eggyolks,sugar,cournflour,flour and vanilla together.Bring the milk to boil in a pan.Slowly pour on to the egg mixture,whisking all the time. Pour the custard into a pan,and cook over a low heat,stirring constantly,until it has thickened.Pour into a clean bowl and set aside to cool.Whip the cream until thick,then fold into the custard.Spoon the custard into the pastry case and spred out evenly. Arrange the fruit on top of the custard. Gently heat the strawberry jelly until melted.Allow to cool and brush over the fruit.Serve to cool.
