Sheekh kabab with Arabic Pita Bread


Sheekh Kabab

Ingredients

500 grams lamb mince
1 medium sized onion (finely chopped)
1 tablespoon garlic paste
1 tablespoon ginger paste
1/2 cup freshly chopped
coriander
Juice of 1/2 lemon or lime
2 tablespoons fresh, unsweetened yogurt (not sour)
1 teaspoon garam masala
2-3 green chilies (finely chopped)
Salt to taste
4 tablespoons vegetable cooking oil for basting kebabs while cooking

METHOD

Put all the ingredients into a large mixing bowl.
Use your hands or a wooden paddle to mix the ingredients thoroughly till they are well blended.

Cover the bowl with cling film and put into the refrigerator for 1 hour.

Soak skewers in water to prep for the kebabs.

Remove from fridge and divide the mix into equal portions. Take each portion and form it into a long sausage-like kebab while pressing on to a skewer. Do this till the mix has firmly adhered to the skewer. Put some oil on your hands to prevent meat from sticking to them. Do this till all the kebab mix is used up.

Grill the kebabs; grilling on a coal fire gives them a lovely smokey flavor. Baste with cooking oil as required, till the meat is done. Turn as often as required.

Serve with Pita bread and garlic sauce!  Yummy!

Arabic Pita Bread

INGREDIENTS

1  tablespoon instant yeast
1 1⁄2 cups water
1 -2  teaspoon sugar
3  cups flour
1  tablespoon  nonfat dry milk powder
1⁄2 teaspoon salt
6  tablespoons  oil

Method

Mix yeast, water and sugar.
Set aside.
In a large bowl, combine flour, dried milk and salt.
Pour in the oil and yeast/water mixture and stir well.
You might need to add more flour or water, depending on the absorbency of the flour.
Knead dough briefly, divide into 18 egg sized balls.
Place on a floured surface, cover and let rest for 15-30 minutes.
Roll one ball out and cook in a skillet until large "bubbles" form.
Flip pita over and cook the other side for a few more minutes.
I flatten it out with a spatula.
Keep bread warm (wrap in a towel or place in a ziploc bag) while cooking the rest of the bread.
These freeze well.
