Thalasseri Motton Biriyani




Ingredients

  • For masala
  • 1Kg Mutton
  • 100Gms Ghee
  • 2Cups Onion
  • 2Cups Tomato
  • 2Tbspn  Ginger crushed
  • 2Tbspn  Garlic crushed
  • 2Tbspn  Green chilly crushed
  • 1/2 Tsp Black pepper crushed
  • 2Tbspn Red chilly powder
  • 1Tsp Garam Masala powder
  • 1/2Tsp turmeric powder
  • 1Tsp Lemon juice
  • 2Tbspn Yogurt
  • 1/4Cup Coriander leaves
  • 1/4Cup Mint leaves
  •  Salt
  • 500Gms Jeerakashala rice
  • 4Tbspn Ghee
  • 2inch piece Cinnamon pieces
  • 4-5Numbers Cardamom
  • 4-5Numbers Cloves
  • 1Tsp Cumin seeds
  • 1Cup Onion
  • 1Tsp Ginger crushed
  • 3Cups Water
  •  Salt



Dum

  • 1Tsp Lemon juice
  • 1/4Cup Cashew nuts and Raisins
  • 2Cups OnionRoasted
  • 1Tsp Garam masala
  • 3-5Tsp garam masals



Preparation of garnishing Items
Heat ghee in a pan. Fry cashew nuts and raisins. Then fry 4 cups of onion with salt.



Preparation of Masala
Add tomato the remaining and let it cook in the remaining ghee. Let it cook.
Add crushed ginger, garlic and green chilly. Saute well.
Transfer fresh mutton to it. Add crushed black pepper and salt. Mix well. Cover it and cook for 5 minutes. 
Add red chilly powder, garam masala powder and turmeric powder. 
Add ½ Tsp of lemon juice, yogurt, coriander leaves and mint leaves. Cover it and cook another 10 minutes.
Then transfer half portion of fried onion. Cook it for another 5 minutes. Now our masala is ready. Switch off the flame.

For rice
Soak jeerakasala rice about 10-15 minutes.
Heat 4 Tbspn of ghee in a pan. Add cinnamon pieces, cardamom, cloves, bay leaves and cumin seeds. Saute well.
Then add 1 Cup of onion and crushed ginger to it. Saute again. Add soaked rice to it and fry well.
Pour 3 Cups of boiling water to it. Cook on low flame, till the entire water absorbed. The rice is done.




Dum procedure
Take cooked mutton masala in a large pan. Half portion of the rice evenly spread over the mutton masala. Sprinkle fried onions, coriander leaves, mint leaves, cashews, raisins, 1 Tbspn of ghee and some garam masala. 
Repeat this process by using remaining rice. 
Close the vessel. Leave it on the gas stove on low flame for 10 minutes. Keep it for another 20 minutes.
Open the lid and combine rice well. 
Yummy thalassery mutton biriyani is ready to serve. Garnish with roasted onions, cashews and raisins. Serve hot with raita, dates pickle, coconut chammanthi. Enjoy!!!!
